¼ cup confectioners’ sugar
Santa Margherita Prosecco Superiore
Directions:
Blend strawberries, confectioners’ sugar, mint and lemon together in a blender until smooth. Chill in refrigerator for 10 minutes. Dived the strawberry mixture among champagne flutes. Top each with Santa Margherita Prosecco Superiore, stir. Garnish each glass with 1 strawberry.

1. EASIEST MEATLOAF EVER

Easiest Meatloaf Ever! Straight from your freezer to your crockpot!

I’m doing a little bit of freezer cooking/prepping today, because our daily life has just been out of control lately. I’m having trouble getting anything on the table, let alone a home-cooked meal, so I absolutely have to prep ahead on weekends when Dr. B is home to help me with the munchkins.
Right now I’m making what I call the Easiest Meatloaf Ever. I literally just dump a bunch of ingredients in my KitchenAid mixer, let it mix everything up, throw it in a ziplock bag, and into the freezer it goes until I’m ready for it. The day I’m going to make it, I just set it in the crockpot, squirt on a little ketchup, and let it cook. How easy is that?
For a meatloaf, you can really add anything you want and the beauty of it is that there’s really no need to measure. But, here’s what I added to mine: (this recipe makes 2 loaves!) 🙂

Easiest Meatloaf Ever: Freezer to Crockpot to Table

This is an easy and delicious meat loaf recipe that you can just take right out of the freezer and throw in your crockpot! This meatloaf holds it's shape REALLY well, doesn't crumb or fall apart when sliced.
Ingredients
  • 2 lbs ground beef
  • 3 eggs
  • ¼ c parm cheese
  • ¾ c shredded cheese
  • ½ c chopped onions
  • ¾ c Italian bread crumbs
  • 1 tsp basil
  • 1 tsp garlic powder
  • Dash cayenne pepper
  • Dash Worcestershire sauce
  • 3 Tbs ketchup
  • ½ packet (or entire packet)onion soup mix
Instructions
  1. Throw it in the mixer and let it spin! Or dig in with your bare hands if you'd rather. Just mix up up reeeaaaal good!
  2. I take half the mixture and form it in a loaf pan, then take it out carefully without disturbing the shape, and place it in a ziplock bag.
  3. Write instructions and what it is on the outside of the bag with a sharpie.
  4. On the day that you're going to serve it, just give your crockpot a quick spray of nonstick cooking spray, put the frozen loaf in the crockpot, put ketchup on top and let it cook on low about 4 hours or til done.
  5. I have added a layer of veggies, potatoes, or cream soup (or all of those things) first and then set the frozen meatloaf on top and it's a great one-pot dish!
  6. It really doesn't get any easier than this! Less than 10 minutes to prep and it cooks itself!
  7. Yum! 😉

2. TUNA NOODLE CASSEROLE

One of my favorite comfort food dishes, my mother-in-law’s Tuna Noodle Casserole.

This is a dish my mother-in-law has been making forever, and it’s one of my husband and my son’s favorite comfort foods.

I love this, because you can make it anyway you want…throw in extra veggies if you have them leftover. You could even use chicken instead of tuna!

Here’s my spin on the classic. 🙂

In honor of Throwback Thursday, I'm making Tuna Noodle Casserole. This is a dish my mother-in-law has been making forever, and it's one of my husband and my son's favorite comfort foods. Here's my spin on the classic.
Ingredients
  • 1 bag egg noodles, cooked according to directions
  • 1 can cream of mushroom soup
  • 2 cans tuna in water
  • 1 cup celery, finely chopped
  • ½ cup onion, finely chopped
  • 3 cloves garlic, chopped
  • 3 TBS butter
  • 1 cup boxed cheese (like Velveeta, but I buy the Aldi brand) diced into cubes
  • ½ cup milk
  • 1 tsp black pepper
Instructions
  1. In a skillet, add butter, onion, garlic, and celery.
  2. Saute on low just until slightly softened.
  3. Reduce heat, and stir in milk and cheese.
  4. Stir constantly until cheese melts.
  5. Keep stirring, and add mushroom soup & tuna.
  6. Stir until melted and very well mixed.
  7. Spray 9x13 baking pan with non stick cooking spray.
  8. Add egg noodles.
  9. Pour cheese mixture over noodles. Sprinkle with pepper.
  10. Stir well.
  11. Should be moist, so add more milk if it’s not.
  12. Bake at 350 degrees for 30 minutes or until bubbly.
  13. I like to sprinkle with Parmesan cheese and parsley flakes.

 

 

3. CROCKPOT VEGGIE SOUP

This is a go-to favorite  in our family. It’s made of nothing but canned veggies, broth & herbs. It could not be simpler! You’ll be surprised at how DELICIOUS it is! It costs just a few dollars for a GIANT crockpot full, and it is so healthy! I make it healthier by always draining and rinsing my canned veggies to remove the excess sodium.

  • About 1 Teaspoon of Each of These Spices: Garlic Powder, Onion Powder, Dried Minced Onion, Paprika, Pepper, Basil, Oregano, Chili Powder
Instructions
  1. Pour veggie stock into crockpot.
  2. Add canned tomatoes with their juices.
  3. Add spices.
  4. Open all remaining cans. Drain liquid. Rinse with cold water. Drain again. Add to crockpot.
  5. Cook on low 6-8 hours.
  6. Serves MANY!

Ingredients
  • 1 Bag Tater Tots
  • 1 Steamer Bag Frozen Mixed Vegetables
  • 1 lb Ground Turkey
  • 1 Can Condensed Cream Soup
  • ¼ Cup Milk
  • Shredded Cheese
Instructions
  1. Spray a 9x13 baking dish with nonstick cooking spray.
  2. Add a single layer of tater tots in bottom of pan.
  3. Brown ground turkey and layer over tater tots.
  4. Steam veggies for 3 minutes in bag, add layer over turkey.
  5. Mix cream soup with milk and pour over entire mixture.
  6. Top with shredded cheese.
  7. Bake at 350 degrees for 45 minutes or until bubbly.

VEGAN CRANBERRY APPLE MUSHROOM STUFFING

Vegan Cranberry Apple Mushroom Stuffing

A vegan, sweet and savory spin on the Thanksgiving stuffing we all know and love.
Ingredients
  • 12 cups unseasoned dry bread crumb cubes
  • 4 cups vegetable broth
  • 1 cup chopped onion
  • 2 cups chopped celery
  • 1 tablespoon minced garlic
  • 1 bag dried cranberries, or “Craisins”
  • 1 cup apples, peeled, cored and diced
  • 1 package fresh mushrooms, washed and sliced
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 ½ teaspoons poultry seasoning
  • 2 teaspoons thyme
  • 1 tablespoon fresh parsley
Instructions
  1. Preheat oven to 375 degrees.
  2. In a small saucepan, add bag of dried cranberries and three cups water. Bring to a low boil, then turn off heat. Set aside and allow cranberries to rehydrate. Drain well after 20 minutes of soaking.
  3. Heat oil on medium in a large skillet, add celery and onion. Cook 4 minutes, stirring frequently.
  4. Add garlic and mushrooms. Cook another 4 minutes.
  5. Sprinkle with all seasonings and stir well.
  6. Add apples and drained cranberries. Stir. Cook 2 more minutes.
  7. Add bread crumbs to a very large mixing bowl.
  8. Pour contents of skillet over bread crumbs, stirring well.
  9. Slowly pour vegetable broth over bread crumb mixture, one cup at a time, stirring gently until all bread is coated.
  10. Add contents of bowl to lightly greased baking dish.
  11. Cover with foil and bake for 40 minutes. Uncover and bake until golden brown on top, about 20 minutes more.
  12. Serve hot.

  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon

  • ½ cup raisins
Instructions
  1. Mix all ingredients in order listed, being careful not to over mix.
  2. Spoon into muffin cups.
  3. Bake at 350 degrees for 15 minutes or until an inserted toothpick comes out clean.

1. Keep a few in your car for the kids to eat when you have a million errands to run.

Halloween & Day of the Dead Drinks From Milagro Tequila

We all know that the spooks and spirits come out on October 31st, but did you know there’s an equally creepy and cool holiday that follows immediately after Halloween?
¡Sí! Dia de Los Muertos, or Day of the Dead, is celebrated on November 1-2 of each year. Traditionally, celebrations include food, drinks and gifts to honor family and friends who have passed.
The holiday originated more than 3,000 years ago in Mexico. Like Halloween, it is full of fun and festivity, with a spooky spin.
Milagro Tequila is helping you celebrate this year with some creepy cocktails to get you in a morbidly merry mood! And I’m going to share with you a few makeup tips to fit right in with the dead and undead!

Blood-Orange-Margarita-Milagro-Tequila
Blood Orange Margarita With Milagro Tequila

Blood Orange Margarita
1 ½ parts Milagro Silver Tequila
1 part Fresh Lime Juice
¾ part agave nectar
¾ part Solerno Blood Orange Liqueur
Pour all ingredients in a cocktail shaker filled halfway with ice. Shake and strain over fresh ice in a salt-rimmed rocks glass. Garnish with orange and lime wheels.

2 parts Milagro Silver Tequila
1 part fresh ruby red grapefruit juice
¾ part agave nectar
½ part fresh lime juice
1 capsule activated charcoal
Top with 3 parts club soda
Garnish with grapefruit peel; charcoal & kosher salt rim

People celebrate Day of the Dead by leaving candy sugar skulls on an altar as an offering to those who have passed on. Painting their faces to match these ornate candy skulls is also a key element in the celebration. This eerily beautiful Dia de Los Muertos makeup has recently become one of the most popular Halloween costumes.
Here’s how to do your own DIY Day of the Dead makeup!
1. Start with a clean, dry face.
2. Cover face with white theatrical makeup.
3. Draw circles around eyes and fill in thoroughly with black makeup.
4. Using a thin brush, adorn outside of eyes with dainty floral circles.
5. Fill in nose using black, creating the appearance of a hollow hole.
6. Line lips in black, embellishing with short vertical strokes around entire mouth.
7. Add additional floral embellishments to forehead and cheeks.
