Cheap Homemade Crockpot Veggie Soup

Crockpot veggie soup!

This is a go-to favorite  in our family. It’s made of nothing but canned veggies, broth & herbs. It could not be simpler! You’ll be surprised at how DELICIOUS it is! It costs just a few dollars for a GIANT crockpot full, and it is so healthy! I make it healthier by always draining and rinsing my canned veggies to remove the excess sodium.

Cheap Homemade Crockpot Veggie Soup

Ingredients
  • 1 Carton Vegetable Stock
  • 1 Can Diced Tomatoes
  • 1 Can Corn
  • 1 Can Green Beans
  • 1 Can Carrots
  • 1 Can Kidney Beans
  • 1 Can Mixed Vegetables
  • About 1 Teaspoon of Each of These Spices: Garlic Powder, Onion Powder, Dried Minced Onion, Paprika, Pepper, Basil, Oregano, Chili Powder
Instructions
  1. Pour veggie stock into crockpot.
  2. Add canned tomatoes with their juices.
  3. Add spices.
  4. Open all remaining cans. Drain liquid. Rinse with cold water. Drain again. Add to crockpot.
  5. Cook on low 6-8 hours.
  6. Serves MANY!

Low carb veggie bowl, the perfect Meatless Monday meal.

This is a recipe I came up with when my husband and I were low-carbing. We aren’t dieting right now, but I still make it, because we think it just tastes so good! 🙂 It’s even better with rice or bread. 🙂

This is a recipe I came up with when my husband and I were HARD CORE low-carbing. We aren’t dieting right now, but I still make it, because we think it just tastes so good!
Ingredients
  • 1 small head cabbage, chopped in thin strips
  • 1 Pkg fresh sliced mushrooms
  • 3 cloves garlic, chopped
  • ½ red bell pepper sliced in strips
  • 1 small onion, roughly chopped
  • 1 small can Ro-Tel canned tomatoes (Aldi makes their own brand, use that!)
  • 1 TBS Olive oil
  • 2 TBS Apple cider vinegar
  • ½ tsp Soy sauce
  • 1 tsp Red pepper flakes
Instructions
  1. In a large skillet or wok, add olive oil.
  2. Add onions, garlic, peppers & mushrooms.
  3. Sautee for 3 minutes.
  4. Add cabbage, vinegar, soy sauce, and red pepper flakes.
  5. Sautee 6 minutes, or until cooked but still crispy, stir thoroughly.
  6. Add the canned tomatoes. Stir.
  7. Serve hot, with rice or bread (if you don’t mind the carbs). 🙂
