Crockpot Chicken Caesar Sandwiches

I made a crockpot FULL of these sandwiches the other night… On a day when I was panicking because it was noon and I hadn’t put anything in the crockpot yet! When they were done, I put one sandwich together so I could take pics for the website, ate half of it, gave the rest of it to Dr. B because I was in a rush…and then I went to go get a massage. Came home from massage, entire crockpot = empty (hubby+the Pumpkin+teenager+his friends). Sooooo…..I can say these are pretty darn good. On the down side, I REALLY wanted another one because they were sooooo good. On the up side, I GOT A MASSAGE! 🙂 So I really can’t complain.
These are super easy, you’ll want to make them all the time.

2 pounds boneless skinless chicken breasts
1 cup Caesar dressing
1/2 cup shredded Parmesan cheese
1/4 cup parsley
ground pepper
romaine lettuce
hamburger buns

Crockpot Chicken Caesar Ingredients

Spray your crockpot with nonstick cooking spray.
Add in your chicken breast.


Because I was in such a hurry, I had to throw mine in frozen. They still coked perfectly! 🙂

Add a cup or so of water and cook on low for about 4 hours.
Remove the chicken.Pour all juices into another container (discard, or save them in your freezer to make stock!)
Shred the chicken!
I used my KitchenAid Mixer to shred my chicken, just because it’s new and I want to use it for everything!
I was amazed how quickly it was done shredding. Seriously like only 15-20 seconds!
Return shredded chicken to crockpot.
Add Caesar dressing, parsley flakes, and Parmesan cheese. Let it cook another 30 minutes or so.
Chicken Caesar Sandwich Crockpot
Serve on buns, with lettuce. …or in a tortilla, or serve as a lettuce wrap, or on top of a salad….
