Crockpot Cilantro Lime Chicken Tacos
This is a super simple freezer meal that you can prep ahead of time, freeze, and just throw in the crock pot on a busy day! This is one of my favorite meals to make on the days when I do bulk freezer meal prep, because you just dump everything in a bag and freeze flat. It’s also REALLY flavorful. 🙂 Enjoy!

An easy make ahead meal that goes straight from freezer to crockpot!
Ingredients
- 3 chicken breasts
- 1 can black beans
- 1 can corn
- 1/2 cup salsa
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1 Tbsp minced garlic
- Juice from 2 limes
- 1 Tbsp cumin
- 1 Tbsp chili powder
Instructions
- Dump all ingredients in large freezer bag.
- Freeze flat.
- When ready to cook, remove from freezer and thaw for a couple hours…or add directly to crockpot if short on time.
- Cook on low 6-8 hrs.
- Serve on tortillas.
- Top with cheese, sour cream, and avocado if desired.
