Crockpot Cilantro Lime Chicken Tacos

This is a super simple freezer meal that you can prep ahead of time, freeze, and just throw in the crock pot on a busy day! This is one of my favorite meals to make on the days when I do bulk freezer meal prep, because you just dump everything in a bag and freeze flat. It’s also REALLY flavorful. 🙂 Enjoy!

An easy make ahead meal that goes straight from freezer to crockpot!
  • 3 chicken breasts
  • 1 can black beans
  • 1 can corn
  • 1/2 cup salsa
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 Tbsp minced garlic
  • Juice from 2 limes
  • 1 Tbsp cumin
  • 1 Tbsp chili powder
  1. Dump all ingredients in large freezer bag.
  2. Freeze flat.
  3. When ready to cook, remove from freezer and thaw for a couple hours…or add directly to crockpot if short on time.
  4. Cook on low 6-8 hrs.
  5. Serve on tortillas.
  6. Top with cheese, sour cream, and avocado if desired.
